Peru's national drink since the 1920s, created by Victor Vaughen Morris in Lima. The egg white foam and bitters dash make it one of the most elegant sours.
Ingredients
- pisco 2 oz
- lime juice 0.75 oz
- simple syrup 0.5 oz
- egg white 1
- angostura bitters few dashes
Instructions
Dry shake (no ice) all ingredients except bitters to emulsify the egg white. Add ice and shake hard. Strain into a chilled coupe. Dash bitters on the foam. Garnish with a lime wheel if desired.
