Pisco Sour

Ingredients:

pisco, lime juice, simple syrup, egg white, angostura bitters

Peru's national drink since the 1920s, created by Victor Vaughen Morris in Lima. The egg white foam and bitters dash make it one of the most elegant sours.

Ingredients

pisco 2 oz
lime juice 0.75 oz
simple syrup 0.5 oz
egg white 1
angostura bitters few dashes

Instructions

Dry shake (no ice) all ingredients except bitters to emulsify the egg white. Add ice and shake hard. Strain into a chilled coupe. Dash bitters on the foam. Garnish with a lime wheel if desired.
